Chicken Cacciatore

a easy, healthy, quick dinner?
check.

heat a large sauce pan (in my case a wok) & olive oil on high
place a few chicken breasts meaty side down and brown for 3-4minutes
flip chicken & brown other side, move to a plate.
reduce heat and add more oil.
place 10 oz of buttom mushrooms (quartered) in pan and simmer for 3-4 minutes with salt.
add two green bell peppers and one medium white onion (sliced) to mushrooms.
simmer vegetables until soft, approx. 5-7 minutes.
add two 14oz cans diced tomatoes (with basil, oregno, garlic).
add teaspoon fresh rosemary & 1/2 cup of water.
throw in some red pepper flakes for spice.
bring to simmer.
return chicken breasts to pan & simmer covered for 15 minutes.
remove lid & simmer an additional 10 minutes.
serve over whole wheat spaghetti.

journey, not destination.


somehow i had an ephiany about cookies. actually summer's carrot cake cookies i'd been dying to try.
see my journey of making the cookies was so much sweeter than the destintion of the cookie.
the cookies:
looked okay,
(i have no patience, artistic skill or neatness)
tasted great,
but it felt amazing just to be creating in the kitchen.

lately i've been so concerned with a destination.
any destination.
a degree.
a career.
a family.

but here i am.
living everyday.
ignoring a journey.
an amazing journey.
creating a life.
whatever that life may be.
a career/degree/family..
that will just be short rewards for a long journey.
this journey needs to be enjoyed

focus on the journey,
not the destination.
joy is found not in finishing an activity but in doing it.
